Assurance Technician
Mr.
Gerald Prentice
Gerry
worked 16 years with the State of
Maine
,
Dept. of Agriculture, Food & Rural Resources, most recently as Supervisor of
the Division of Regulations, before joinging Patco.
Some of his responsibilities there included sanitation/safety inspections
of 800 to 900 food processing and/or retailing facilities, including: all food
processors except USDA inspected meat plants; home food processors; food storage
facilities of all types; mobile vending units of raw and/or prepared foods; and
retail food establishments of all sizes and designs.
His
inspection duties included enforcing laws and supporting regulations under the
Maine Food Law, training personnel in food handling techniques, advising on
state, as well as FDA, requirements such as the current Model Food Codes. He
also performed Seafood HACCP inspections of seafood processing facilities under
sub contract for the U.S. Food & Drug Administration. This included doing
detailed reports and recommendations concerning follow-ups.
Later
duties had him overseeing the entire operation and 8 Consumer Foods inspectors,
which required him to track and advise field personnel in all aspects of the
Division’s activities. As part of
this job, he attended and testified at Legislative hearings and rulemaking
sessions, dealt with public relations issues, problem-solved at all levels of
operations, directed the
FDA/State
HACCP inspection program which continued after this period, held staff
meetings for standardization of work activities of personnel and discussion of
their problems and/or questions concerning the scope of Department functions.
Gerry was required to spend time in the field with inspectors as time
allowed. At this time he
also assumed hiring and filing responsibilities and personnel evaluation
duties.
Gerry
is trained and certified as a HACCP trainer, resulting in three-day training
courses for individuals and businesses affected by the FDA HACCP regulation.
Although not a part of the job description, three inspectors participated in
the training classes as an effort to boost
Maine
's
viability in
the seafood industry.
